Palais des Thés in Norway invited me to participate in one of their tea courses. Being a tea enthusiast, I jumped at the chance, and signed up for a green tea class.
This is the sight that met me at arrival. Seven types of green tea. The first four are Japanese, while the last three are from China. Looks pretty gorgeous, doesn’t it?
Did you know that the Chinese WOK the tea, and then roll, fold or twist it as a part of the production process while the Japanese STEAM it?
Like wine tasting, there are certain glasses more appropriate to get the full taste experience. I think these are just super cute! I want some!
High quality Japanese tea might look dark while it’s dry, but gets a fresh, lively green color after contact with water.
Vuong was extremely passionate about tea, and a great lecturer.
The difference between Japanese and Chinese is pretty easy to spot. Japanese tea (front) is almost shiny from the steaming process, while the Chinese tea (background) is more matte.

The three Chinese variations taste very differently, but are from the same plant. The most exclusive green tea, is the one that’s the greenest. Gunpowder (top, right) is a cheaper blend, almost black (looks like gunpowder) and is commonly used in Moroccan Mint tea etc.

Above is Julie, she poured the tea and made sure every blend was processed the correct way. I think she’s really beautiful in an understated kind of way.
After the course, I snooped around the store and took some photos of all the eye candy. For a while there, I seriously considered planning out our new kitchen around tea.
It’s all so gorgeous..
The girl above sat besides me during the course. I thought I was enthusiastic about tea, but she was a pro. We were the tea nerds sitting front row :)
(however, I realized that I really don’t know that much about tea. need to learn more!)
This is one of my favorite blends, Fleur de Geisha. FdG is a Japanese green tea, delicately flavored with cherry blossoms.
So what’s my conclusion after going through the green tea class? I’M COMING BACK!
The next class I WILL take, is called A Gourmet Experience of Tea and Chocolate. Doesn’t even just the title give you goose bumps? It’s a collaboration with a French Chocolaterie. YUMMY!
